Chile Colorado Special

Colorado turns 150 on Aug 1st! We love what we do, and we are honored to call Colorado home. So, to celebrate we are doing a Chile Colorado Special. You heard that correct, not another green chile special. Instead, we will be serving the traditional Mexican dish made with braised beef, refried beans, and rice, served along a side of fresh tortillas and a pickle. The dish gets its name from the deep red color of the chili sauce it stews in (Colorado = Reddish Hue in Spanish in case you live under a rock).
